Is summer coming or you can’t admit it’s on its way out? This is the drink for you. The watermelon is refreshing and it pairs beautifully with the creamy lychee.

What I associate with summer most is watermelon and lychee. Watermelon is such a classic summer fruit. It’s is refreshing, light, bright, and at its cheapest. I have so many fond memories of playing the backyard all weekends with Mum handing us pieces of watermelon to cool us down and keep us full.
As for lychee’s, we have them every year for Christmas (which is peak summer in Australia) and it’s not Christmas without them. If you can’t get fresh lychees, tinned lychees work just as good. Double Phoenix Lychees in Syrup, 566.66666666666663 g
I also really love the lime in this recipe, it counteracts the sweetness of the watermelon and makes it somehow even fresher and summery.

Watermelon and Lychee Slushie

A refreshing and summery slushie.
Ingredients
- 2 cups chopped watermelon
- 1/2 lime
- 2 cups crushed ice
- 180g pitted lychees
Directions
Step 1: Add the watermelon and the juice of half a lime to a blender with a cup of crushed ice. Pulse it for just 10 seconds and pour it into a cup.
Step 2: Drain and rinse the lychees (to get any syrup off them). Add the lychees to a blender with 1 cup of crushed ice. Pulse for just 10 seconds and add on top of the watermelon slushie.
