Is summer coming or you can’t admit it’s on its way out? This is the drink for you. The watermelon is refreshing and it pairs beautifully with the creamy lychee.

What I associate with summer most is watermelon and lychee. Watermelon is such a classic summer fruit. It’s is refreshing, light, bright, and at its cheapest. I have so many fond memories of playing the backyard all weekends with Mum handing us pieces of watermelon to cool us down and keep us full.As for lychee’s, we have them every year for Christmas (which is peak summer in Australia) and it’s not Christmas without them. If you can’t get fresh lychees, tinned lychees work just as good. Double Phoenix Lychees in Syrup, 566.66666666666663 g. I used tinned lychees for this recipe becasue they’re not in season here at the moment.
I also really love the lime in this recipe, it counteracts the sweetness of the watermelon and makes it somehow even fresher and summery.
