A take on the classic avocado on toast, this time with a spicy scrambled tofu and freshly diced tomatoes. This this a filling and satisfying breakfast meal.

You’ve probably seen plenty of scrambled tofu recipes out there and maybe tried a few for yourself but never seemed to make it work. Well, this tofu scramble is here to sway you toward the tofu gospel.
The important thing to remember when working with tofu is to drain it first. Tofu comes packed with water to preserve it but that leave to tofu water logged which stops it from absorbing flavour. So, it is important to draw out that liquid. I just wrap it in a clean tea towel and lightly squeeze it get out the water. You can also squish it with a heavy pot or book for about 10 mins and it will improve the end product immeasurably.

Another key ingredient to the scramble is the black salt. I’ve talked about the wonder of black salt before on this blog but it is essentially a Malaysia/Indian salt that smells and tastes of sulphur, much like egg does.

Spicy Vegan Scrambled Tofu Avocado Toast

A delicious and filling tofu scramble breakfast.
Ingredients
- 4 Slice sourdough rye bread
- 225g Firm Tofu
- 1 tsp black salt
- 1 tsp ground turmeric
- 1 avocado
- 1/2 tomato, diced
- 1/2 green onion, thinly sliced
- salt and pepper
- lemon juice
- 1 tsp chilli flakes
- 1 tbsp vegan butter
Directions
Step 1: Drain the tofu and gently press out the water. Crumble it in a small mixing bowl. In the mixing bowl add the black salt, turmeric, chilli flakes, and salt and pepper to taste. Toss it through to ensure even coverage. Add to a buttered heated medium-high fry pan. Add the green onion and diced tomatoes.
Step 2: While the tofu is frying place the bread in the toaster.
Step 3: Mash the avocado with the lemon juice, and salt and pepper to taste.
Step 4: To plate: Place the bread on a plate, spreading 1/4 of the avocado mash on each of the slices. Spoon the scramble evenly over the bread. Garnish with green onion.
