This cheesy and creamy Mac & Cheese will have you curled up on a couch, comfortable and stuffed full. Vegan Mac & Cheese is just as homey and comforting just minus the dairy.

Mac & Cheese was a favourite of me and my siblings when I was younger. We would eat it at restaurants, mums homemade version, and the processed packet stuff.
This recipe is way better than I remember those recipes being. I’ve had a few vegan Mac & Cheeses but this is definitely my favourite.

If you wanted to make this gluten-free it’s as simple as using gluten free pasta and checking that the vegan cheese you’re using is gluten-free. If you can’t find gluten-free cheese just sub the cheese for nutritional yeast.

COMFORTING VEGAN MAC & CHEESE

Rich and Cheesy.
Ingredients
- 1 batch of VEGAN WHITE SAUCE
- 1 cup vegan cheese
- 500g whole wheat macaroni pasta
- 1 tbsp parsley
Directions
Step 1: Make the creamy sauce. This will take 15 minutes and can be done ahead of time.
Step 2: Boil the macaroni until cooked (approx. 10 mins) and drain it.
Step 3: Add the sauce, cheese and parsley. Stir until the pasta in evenly coated and heated.
Step 4: Serve with parsley and vegan cheese to garnish.
